Kozhukattais are usually prepared using rice flour and very popular in south India. These are steamed rice dumplings which are very delicious. These are my husband's favourite. Sweet and Savoury kozhukattais can be prepared and both are simply great. Below is the recipe for making savoury kozhukattais using rice flour.You can serve these with chutney or even sambhar. I make kozhukattais using Wheat also. Check out those recipes:
What you need?
1 cup Rice flour (I use Puttu Podi )
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
1/2 tsp Urad dal
1/2" pc Ginger finely chopped
2-3 Green chillies chopped
4-5 Curry leaves chopped
1/2 cup grated Coconut
2 cups Water
A pinch Asafoetida
1 tsp Oil
Salt
How to prepare?
Heat oil in a pan. Splutter mustard and cumin seeds. Add urad dal, ginger, green chillies, asafoetida and curry leaves.Saute for a minute. Now add water and let it boil. Reduce to low flame,then add salt and coconut.Mix well and finally add the rice flour little by little, mixing all the time. The mixture thickens very quickly.
When the mixture starts leaving the pan, switch off stove and keep aside. When its warm enough to handle, make medium size balls out of it and place them in a steamer or idly cooker. Steam for 12-15 minutes. Serve hot with coconut chutney or sambhar.
Makes about 15-16 medium size Kozhukattais.
