Coconut Rice

This is one of the simplest and quick rice you can ever make. This rice tastes best with freshly grated coconut and basmati rice. I had made this for my son's birthday party. The pic was taken during the busy party time and sorry that I couldn't get better pics. I had made this for a bunch of people then. But I have written the recipe below for a smaller serving. If you like coconut, then you will surely love this rice. You can have this rice with just any pickle. You can also use leftover rice for making this simple , but great rice!!



What you need?

1 cup Basmati Rice
3/4 cup grated Coconut
1/2 tsp Mustard Seeds
1/2 tsp Cumin Seeds
1 tsp Urad dal
2 tbsp broken Cashews
7-8 Curry Leaves
1" pc Ginger, chopped
3-4 Green Chillies chopped
1 tbsp Coconut Oil
A pinch Asafoetida
1.5 cup Water
Salt

How to prepare?

Wash the rice and soak in water for 30 minutes. In a pressure cooker, add 2 tsp oil, add the rice after draining the water. Fry the rice slightly for few seconds. Add water and a little salt. Pressure cook for 2 whistles. Once the pressure is released, remove the cooked rice from the cooker and spread it on a plate so that rice won't be sticky.

Heat oil in a pan. Splutter mustard seeds and cumin seeds. Add the cashews and fry until they turn slight brown. Now add urad dal, fry for few seconds. Add the curry leaves and asafoetida. Now add ginger, green chilli and saute for few seconds. Then add the coconut and mix well. Add a little salt , but remember that rice was cooked by adding salt, so add accordingly. Finally add the rice and mix thoroughly.Serve hot with pickle and papad or raita.

Serves 3-4

Notes:
*You can add chana dal too while tempering.
*Increase coconut if you desire for a great taste.
*You can use leftover rice also for making this.
*This rice tastes great if you use coconut oil.
