Spinach and Carrots are a great combination for a pulao. They make the pulao more colourful and ofcourse healthy too. Few days back, I had prepared this pulao and to be honest the rice became a little mushy :-(. So yesterday afternoon I thought of preparing it again and wanted to make it much better than the last time. I was so happy when the pulao came out very good. I prepared it in pressure cooker which is the easiest method...So its an easy and a colourful rice..kids will surely enjoy.My little one did like the pulao a lot !!

| Spinach and Carrots Pulao |
Ingredients:
1 cup Basmati rice
a small bunch Spinach, chopped
3/4 cup grated Carrots
1/2 cup chopped Onion
1/2 tsp Cumin seeds
1 tsp Ginger-Garlic paste
2 Green chillies, chopped
1/4 tsp ground Cinnamon
1/2 tsp ground Fennel seeds (I dry roasted the Fennel seeds and made a powder)
1/2-1 tsp Garam masala
1.5 cups Water
Salt
Oil/Ghee
Wash the rice and soak in water for 30 minutes.
Heat some oil/ghee in a pressure cooker. Splutter cumin seeds. Add onions, ginger-garlic paste and green chillies.Saute for a minute. Now add carrots and spinach. Saute for 2-3 minutes.
Add the spices- ground cinnamon and fennel seeds, garam masala. Mix well. Add rice and give a stir. Finally add water and salt. Close the cooker with the lid. Pressure cook for 2 whistles.
I garnished the pulao with sweetened Cranberries and served it with a simple onion-tomato raita.
